Low Carb Watermelon Limeade
This easy low carb watermelon limeade cooler is delicious when paired with your favorite tequila or vodka…and perfect on its own.
This low carb watermelon limeade only has three (3!) ingredients…how easy is that for a summer cocktail mixer? Perfect for spring and summer outdoor BBQ’s. I used the Breville Juice Fountain (not an advertisement, just info!)- but a blender works too. Watermelon is already deliciously sweet on its own, so you don’t need much of the zero calorie sweetener- just a teaspoon or less, to taste. I think of this drink as “bikini weather friendly.” Plus, one of the best things is that it such a thirst quencher. I predict this beverage will be one of your favorites this summer, and it would pair oh so nicely with my Crab Cakes with Panko Bread Crumbs or End of Summer Tomato Gratin.

Ingredients
1 small, seedless watermelon (about 10 lbs)
Limes, 4 each
No Calorie Liquid Sweetener, such as Splenda https://www.splenda.com/product/splenda-liquid-sweetener/
Directions
- Cut watermelon in half and remove rind and any white portion of melon.
- Cut the watermelon halves into large cubes. You should get about 12 cups of watermelon cubes for a 10 lb watermelon.
- Add watermelon cubes in stages to a blender or juicer and puree. Once completely blended, pour through a strainer into a 2 quart container.
- Juice limes through a strainer into container with watermelon juice.
- Add 1 teaspoon of liquid no-calorie sweetener.
- Stir well until thoroughly mixed.
